Fabulous, juicy Maple Roasted Mushroom Burgers 

Makes 4 burgers


4 very large mushrooms

4 garlic cloves

2 tablespoons maple syrup

red or white wine vinegar

salt and pepper

large pinch of thyme

4 oven bottom muffins (or very soft cobs)


4 slices of Port Salut cheese

4 tomato slices

avocado, sliced

red onion slices




Cut out the stems from the mushrooms. Place  in a baking dish gill side up. Score a shallow criss-cross pattern with a sharp knife. Sprinkle on the garlic slices and drizzle with olive oil, maple syrup and vinegar. Sprinkle with thyme and salt and pepper.

Roast in an oven for 15 to 20 minutes at 160 C.

Lightly toast muffins, place a mushroom on the bottom of each one. Layer up dressings and place lid on top.

Serve with your choice of salad, fries, potato salad, onions rings, coleslaw etc.
